Peanut Butter “Cookie Dough” Hummus

08 Dec Peanut Butter “Cookie Dough” Hummus

(This recipe was adapted from the Baked-in website.)

Ingredients:
  • 1 (15 ounce) can garbanzo beans (also sometimes called chickpeas), drained and
    THOROUGHLY rinsed
  • 1/4 cup smooth NATURAL peanut butter (or you may sub for Sunbutter, as a nut free option)
    *1/3 cup pure Maple Syrup
  • 2 tsp vanilla extract
  • 1/3 cup semi sweet chocolate chips (we use the EnjoyLife brand chocolate chips)
  • Instructions:

    1. Combine the beans, peanut butter, maple syrup, & vanilla in the bowl of the food processor.
    2. Process until creamy, making sure it’s free from any lumps. (This may take up to 2 minutes.)
    3. Transfer to a bowl and stir in the chocolate chips
    4. Place in the refrigerator for 20-30 minutes to help thicken & set dip.

    ***We enjoy this dip with sliced apples, celery, & (gluten-free) pretzels
