08 Dec Homemade “Candy Bars”
Yields:24 bars

free, sub out with Sunbutter.)

Ingredients:
- 2 cups creamy organic peanut butter
- 1 & 1/3 cup organic honey (local, unfiltered)
- 1 cup coconut oil (No substitutions! This is what gives the bars a creamy texture & flavor.)
- 6 & 1/2 cups oats, NOT instant (We use Bob’s Red Mill gluten free rolled oats)
- 1 & 1/4 cups dairy-free Chocolate Chips (We use EnjoyLife brand)
- 1 cup dried cranberries
Instructions:
- In a large stock pot, melt together peanut butter, honey, & coconut oil over medium heat.
- Turn heat to LOW and stir in oats (about 2 cups at a time) & cranberries. Be sure everything
is combined & coated evenly. - Turn heat OFF & stir in chocolate chips until they are melted.
- Transfer into a large greased cookie sheet. Spread the mixture out evenly in the pan so the
bars will be the same thickness. - Place cookie sheet in the refrigerator for approximately 30 minutes or until firm. Cut
square-shaped bars and remove them from the cookie sheet. Enjoy them cold or room
temperature. Store in the refrigerator in a sealed container, layering the bars with
parchment paper to keep them from sticking together.
